Homeschool Memoirs-Winter Treats

This week I want to invite you to share one of your favourite winter treats. A treat you look forward to making when the snow falls and include the recipe for it so others can try it out.

There’s something about this time of year that seems to promote the making of sweet treats and yummy favorites.  My absolute favorite treat that I usually only get to indulge in during the winter is Divinity Fudge.  But I don’t make it.  My mom does.  I have tried to make it several times and I can never get it to come out the way it should.  I beat the dickens out of it and still end up with goo.  But my Mom makes the best Divinity I have ever had.  I just wish it wasn’t so hard to make.

I’ve heard that you need to make this on a dry, warm day with very low humidity in order for it to set.  That may be the issue I have.  I don’t think to check the weather before I cook.

This is the recipe I think that she uses, but I may be mistaken.  I found it in my recipe notebook so I think it’s the one I got from her.

3 cups sugar
3/4 cup light corn syrup
1/2 cup water
2 egg whites
1 tsp. almond extract
1 cup chopped nuts

Place sugar, corn syrup, and water in heavy sauce pan. Over medium heat, cook to hard ball stage (248 degrees). Remove from heat and let stand until temp. drops to 220 degrees.  Do not stir during the temperature drop.

Place egg whites in bowl. Whip until soft peaks form with an electric mixer at medium speed about 1 minute. Gradually add syrup in a fine stream, taking about 2-1/2 minutes to pour. Reduce to speed and add almond extract. Continue whipping 20 to 25 minutes or until mixture starts to become dry. Turn mixure to low speed and add nuts, mixing just until blended. Pour into prepared pan.

    I have never made this, but I know that some people seem to have the knack for making it!!

    My husbands grandmother could always make good divinity before she passed away. I have never attempted it.
